Fried Chicken Recipe
"THE CHICKEN COOP" on Asylum Avenue in Hartford. The owners also had restaurants in Bridgeport and New Britain, CT that served the same Fried Chicken and Onion Rings that were deemed next-to-none by patrons lucky enough to have experienced them.
NOTE: This recipe from Crisco’s “Good Eating Cookbook” and is offered as a next-best thing to The Chicken Coop's incomparable Fried Chicken.
FRIED CHICKEN DELUXE
* 1 frying chicken, cut in pieces* 1 egg* 3/4 cup milk* 3 tablespoons melted vegetable shortening* 1 cup flour* 1/4 teaspoon salt* 2 teaspoons sugar* Vegetable shortening for fryingSteam chicken for 20 to 25 minutes until tender.Beat egg with milk, and add melted shortening. Combine flour, salt and sugar, and add to milk mixture, beating until smooth.Salt chicken, and dip in batter. Fry in vegetable shortening heated to 365 degrees (or until a 1-inch cube of bread browns in 60 seconds). Fry chicken until golden brown. Makes 4 servings.
